Jean-Louis ran the Crillon then the Hôtel du Martinez before taking on the overall management of the Relais & Châteaux chain, while Suzanne won her spurs at the Concorde and Ambassador hotels in Paris before going to work for Chanel.

In 2004, they became the new owners of this elegant, peaceful manor house in the Beaune countryside. Having renovated the bedrooms, they created their Bistrot du Bord de l’Eau in 2006, a cosy spot by the riverside, ideal for discovering the chef’s talents at lunchtime, at very affordable prices.

In 2007 and 2008, 8 new bedrooms combining sophistication and relaxation were completed in a lodge in the grounds.

Still on the go in 2009, this dynamic couple is getting ready to open new premises in the Hostellerie: a shop selling regional products (mustard, gingerbread, wine, etc.), cellars for aperitif tastings led by their sommelier and a brand new, high-tech, cosy seminar room in which the exposed stonework and fireplace create an atmosphere ideal for creative brainstorming...

And as the house is built on daily challenges, they are completely re-designing the kitchens to adapt to the increasing success of their two restaurants. With all these projects on the go, we can see why Jean-Louis Bottigliero would like to be everywhere at once, so that, day by day, he could be close to his guests, his staff and his partners.
